Ingredients
- 3 tablespoons brown sugar
- 1 pound beef for stew, cut in 1 inch pieces
- 2 cups fresh pigeon peas
- 1 1/2 cups water
- 1 1/2 cups uncooked brown rice
- 1 cup coconut milk
- 1 cup chopped carrot
- 3 tablespoons coarsely chopped fresh parsley

Heat a substantial saucepan over an intermediate temperature until the sugar starts to transform and turn into a golden, syrupy consistency. Stir in beef pieces and cook until they acquire a deep brown hue.

Introduce the frozen peas, water, uncooked rice, coconut milk, and sliced carrot into the saucepan. Bring the mixture to a gentle boil.

Cover the saucepan with a lid and continue cooking until the rice is cooked through, approximately 25 minutes.
