Ingredients
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 6 eggs, separated
- 1/2 cup white sugar, divided
- 1 cup self-rising flour
- 1 lime, zested
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 ounce) can evaporated milk
- 1 cup heavy whipping cream
- 1 teaspoon amaretto liqueur
- 1 cup heavy whipping cream
- 1 (4 ounce) container sliced peaches, drained
- 1 teaspoon grated lime zest
Instructions
1
Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit (or the equivalent temperature of 175 degrees Celsius). Next, take a 9-inch springform pan and grease it with butter before coating it evenly with flour.
2
Now, take a glass or metal bowl and whisk the egg whites until they become frothy. Gradually add 1/4 cup of sugar and continue whisking the mixture until it becomes stiff and forms soft peaks. Clean your beaters thoroughly.
3
In a separate bowl, whisk the egg yolks until they become smooth and creamy. Add another 1/4 cup of sugar to the bowl and continue whisking until the mixture turns pale yellow. Using a spatula, gently fold the egg yolks into the egg white mixture.
4
Sift some flour into the bowl and carefully fold it into the batter. Add a pinch of lime zest to give your cake a unique flavor. Pour the mixture into the prepared springform pan.
5
Place the springform pan in a preheated oven and bake until the edges pull away from the sides of the pan, approximately 30 minutes. Turn off your oven but keep the cake inside for an additional 20 minutes.
6
While the cake is resting in the oven, prepare a special '3 milks' mixture. Combine condensed milk, evaporated milk, 1 cup of heavy cream, and amaretto liqueur in a blender. Blend the mixture until it's well combined.
7
Once the cake has cooled down, remove it from the springform pan and place it on a serving plate. Use a fork to pierce the cake several times across the top. Pour the '3 milks' mixture over the cake.
8
Refrigerate the cake for about 1 hour, allowing the milk mixture to soak in and the flavors to meld together.
9
Using an electric mixer, beat 1 cup of heavy cream in a chilled glass or metal bowl until it forms soft peaks. Top the cake with whipped cream, peach slices, and a pinch of lime zest to give it a beautiful finish.
