Traditional Ukrainian Borscht
Ingredients
  • 1 (16 ounce) package pork sausage
  • 3 medium beets, peeled and shredded
  • 3 carrots, peeled and shredded
  • 3 medium baking potatoes, peeled and cubed
  • 1/2 medium head cabbage, cored and shredded
  • 1 cup diced tomatoes, drained
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 (6 ounce) can tomato paste
  • 8 3/4 cups water, divided, or as needed
  • 3 cloves garlic, minced
  • 1 teaspoon white sugar, or to taste
  • salt and pepper to taste
  • 1/2 cup sour cream, for topping
  • 1 tablespoon chopped fresh parsley for garnish

Collect all necessary components.

Break the sausage into small pieces and place them in a large skillet heated to medium-high temperature. Continue stirring until the sausage is no longer pink, then remove it from the heat and set it aside momentarily.

Fill a large container with water up to halfway, approximately 8 cups, and bring it to a rolling boil.

Add the sausage pieces to the container, cover it with a lid, and return it to a boil. Introduce beets into the mixture and let it simmer for 10 minutes. Add carrots and potatoes, then continue cooking until the potatoes are tender, taking around 10 additional minutes. Stir in cabbage and tomatoes.

Heat oil in a separate skillet over medium heat. Add the onion and cook until it's tender, then stir in tomato paste and the remaining 3/4 cup of water until well combined; transfer this mixture to the main pot.

Add garlic to the soup, cover it again with a lid, and switch off the heat. Allow it to stand for 5 minutes before stirring in sugar and seasoning with salt and pepper.

Divide the soup into individual serving bowls. Top each bowl with a dollop of sour cream and a sprinkle of dill, then serve and enjoy!
