Traditional Tourtière

  • 1 pound lean ground pork
  • 1/2 pound lean ground beef
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1/2 cup water
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground cloves
  • 1 (14.1 ounce) package double-crust pie pastry, thawed

Combine the ground pork, ground beef, sautéed onion, minced garlic, water, salt, thyme, sage, black pepper, and ground cloves in a saucepan. Heat gently, stirring periodically, over medium heat until the mixture comes to a boil. Gradually decrease the heat to a low setting and let it simmer until the meat is fully cooked, approximately 5 minutes. Allow the mixture to cool down completely.

Next, preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Transfer the meat mixture into a pie crust and cover it with the top crust, pinching the edges to seal them tightly. Make a few slits in the top crust to allow steam to escape, and cover any remaining edges with strips of aluminum foil.

Bake the pie in the preheated oven for 20 minutes; remove the foil and return it to the oven. Continue baking until the pie is golden brown, taking around 15 to 20 minutes. Once done, let it cool for 10 minutes before slicing and serving
