- 2 1/2 cups warm water
- 3 cloves garlic, peeled and minced
- 1 1/2 teaspoons dried oregano
- 1/3 teaspoon ground cumin
- 1 tablespoon salt
- 3 pounds cubed pork stew meat

Heat oil in a skillet or frying pan over medium heat. Combine the oil with flour and cook until it reaches a light golden brown color. Introduce chile powder into the mixture and blend well. Gradually add water, stirring continuously until all lumps are eliminated. Incorporate garlic, oregano, cumin, and salt into the mixture. Continue to cook on medium heat for 15 minutes. Remove from heat and allow it to cool down.

Position the pork in a large baking pan or casserole dish. Once the chile mixture has cooled, pour it over the pork and ensure that the meat is evenly coated. Allow the pork to marinate for at least 12 hours or overnight.

Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Place the pork in the preheated oven and bake for at least 4.5 hours, or until the meat is tender, well-cooked, and easily falls apart.
