  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 pinch freshly ground white pepper
  • 2 eggs
  • 1/4 cup milk
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Fill a large pot about two-thirds full with water and put it on the stove to heat up. Once boiling, reduce the heat to a gentle simmer.

At the same time, combine flour, nutmeg, salt, and white pepper in a medium-sized bowl.

In another small bowl, whisk eggs together until they're well mixed. Gradually add the eggs to the dry ingredients in small increments, alternating with milk until you achieve a smooth consistency.

Working in batches, press the dough through a spaetzle maker, or a large-holed colander, or a metal grater into the simmering water. Cook for 5 to 8 minutes. Remove with a slotted spoon or spider and drain thoroughly.

Melt butter in a large skillet over medium heat. Add the cooked spaetzle and cook, stirring gently, until heated through. Serve hot, sprinkled with parsley.
