Traditional Simnel Cake
Ingredients
  • 1 cup margarine, softened
  • 1 cup light brown sugar
  • 4 eggs
  • 1 4/5 cups self-rising flour
  • 1 1/3 cups golden raisins
  • 1 cup dried currants
  • 2/3 cup candied cherries - rinsed, dried and quartered
  • 1/4 cup candied mixed fruit peel, chopped
  • 2 tablespoons grated lemon zest
  • 2 teaspoons mixed spice
  • 1 pound almond paste
  • 2 tablespoons apricot jam
  • 1 egg, beaten

Preheat your oven to the desired temperature of 300 degrees F (150 degrees C). To prevent sticking, lightly spray a deep 8-inch springform pan with non-stick cooking spray and then dust it with flour. Cover the bottom and sides of the pan with a layer of greased parchment paper for added protection.

Mix together butter and brown sugar in a large bowl using an electric mixer until they reach a light and fluffy consistency. Gradually add 4 eggs one at a time, blending well after each addition to ensure everything is fully incorporated. Combine the flour into the mixture and then stir in a variety of dried fruits, including golden raisins, currants, candied cherries, mixed fruit, lemon zest, and mixed spice until they are evenly distributed.

Pour half of the cake batter into the prepared springform pan. To create a decorative layer, divide almond paste into three equal portions and roll out one portion into an 8-inch circle. Place the circular layer over the cake batter in the pan, followed by a covering layer of the remaining cake batter.

Bake the cake in a preheated oven for 2 hours and 30 minutes, or until it is evenly browned and firm to the touch. If the cake starts browning too quickly, cover it with aluminum foil after 1 hour of baking to prevent overcooking. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Before placing the cake under the broiler, set your oven's broiler to high heat. To warm up a small amount of apricot jam, place it in a microwave-safe bowl and heat it for 5 seconds using your microwave. Brush the top of the cooled cake with warm apricot jam to add a sweet and sticky glaze.

Roll out another portion of almond paste into an 8-inch circle and place it on top of the cake. Brush the top with a beaten egg to help hold everything in place. Divide the remaining almond paste into 11 pieces and roll each piece into a ball before arranging them around the outside edge of the top of the cake. Brush the tops of these almond balls lightly with a beaten egg to help them stick together.

Place the cake under the preheated broiler and cook until the almond paste is golden brown, taking care not to burn it. This should take 8 to 10 minutes, depending on your oven's performance.
