Traditional Mohawk Corn Soup
Ingredients
  • 1 tablespoon olive oil, or as needed
  • 1 3/4 pounds pork loin fillet, cut into 1-inch cubes
  • 6 cups water
  • 3 cubes beef bouillon
  • 3 cubes chicken bouillon
  • 3 cups cubed rutabaga
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 2 (15.5 ounce) cans canned hominy, drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • salt and ground black pepper to taste

Preheat the cooking surface by heating olive oil in a substantial pan over a moderately high temperature. Introduce pork into the pan; stir constantly until it is evenly browned from all angles, taking approximately 5 to 10 minutes.

Combine water and bouillon cubes in a large cooking vessel over the same moderately high temperature until the bouillon cubes have fully integrated into the liquid. Introduce pork, rutabaga, carrots, and celery; bring the mixture to a rolling boil. Decrease the heat to a lower medium setting; continue cooking until the vegetables are tender, which should take around 40 minutes.

Add hominy and kidney beans to the soup; continue cooking until both ingredients are tender, adding an additional 30 minutes to the overall preparation time. Season with salt and black pepper to complete the dish
