Ingredients
- 2 tablespoons vegetable oil
- 4 skinless, boneless chicken breast halves
- 1 (12 ounce) package spaghetti noodles, broken in half
- 5 roma (plum) tomatoes, chopped
- 1 large onion, chopped
- 1/2 tablespoon ground cumin
- 2 1/2 teaspoons chili powder
- salt and pepper to taste
- 1 1/2 cups water
- 1 cup shredded Cheddar cheese
Instructions
1
Preheat your stove by placing a large skillet over medium heat, allowing the oil to warm up.
2
Add 1 tablespoon of vegetable oil to the skillet and let it heat for a few moments before adding the chicken breasts. Cook the chicken until it's nicely browned on all sides, then take it out of the skillet and set it aside for now.
3
Next, add any remaining oil to the empty skillet before adding the broken spaghetti. Stir constantly as it cooks until the pasta is nicely browned, then remove any excess oil from the skillet.
4
Add diced tomatoes and onion to the skillet, stirring occasionally as they cook until they're soft.
5
Now, chop up those cooked chicken breasts and add them back to the skillet. Sprinkle some cumin, chili powder, salt, and pepper over the top of the chicken mixture to give it some extra flavor.
6
Pour in a bit of water and cover the skillet, letting it simmer over medium-low heat for about 10 minutes. Check on it every now and then to make sure the pasta is tender, and add more water if you need to.
7
Finally, spoon all that delicious chicken mixture into bowls and top it off with some shredded cheese.
