Ingredients
- 1 pound bacon, diced
- 2 large onions, diced
- 1/2 cup butter
- 5 pounds russet potatoes, peeled and shredded
- 1 (12 fluid ounce) can evaporated milk
- 6 eggs
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
The first step is to cook the bacon in a Dutch oven over medium heat. Place it inside and let it begin to soften and release its grease. Next, add the onion and continue cooking until it becomes soft and translucent.
3
Once the mixture starts to soften, remove the cover from the Dutch oven. Continue cooking until it reaches a deep golden brown color and develops a rich caramelized flavor.
4
To add an extra layer of flavor, stir in the butter until it melts. Then, combine the cooked onion mixture with shredded potatoes and mix well.
5
In a separate bowl, whisk together evaporated milk and eggs until they are fully incorporated. Pour this mixture into the onion and potato mixture, ensuring everything is well combined.
6
Transfer the mixture to a 9x13-inch baking dish and bake in the preheated oven until it's bubbly and golden on top. If the top starts to brown too quickly, cover it with foil to prevent overcooking.
7
Once done, remove the dish from the oven and let it stand for 10 minutes before slicing into 3x3-inch squares. Serve the dish hot and enjoy.
