  • 1 parsnip, peeled and cut into large chunks
  • 4 cups water, or as needed
  • 3 large potatoes, peeled and quartered
  • 1 tablespoon chopped fresh rosemary
  • 1 cup coarsely chopped leeks
  • 1 tablespoon chopped fresh parsley for garnish

Collect all necessary components for the dish.

Heat a substantial amount of oil in a large cooking vessel or heavy pot over a moderate temperature. Introduce lamb pieces into the pot and cook, stirring softly, until they are uniformly browned on all sides. Add a pinch of salt and a few grinds of pepper to enhance the flavor.

Add sliced onions, chopped carrots, and diced parsnips into the pot and cook gently for a short while. Introduce water into the mixture, then cover the vessel and bring the contents to a rolling boil; gradually decrease the heat to a low setting and let it simmer until the lamb is tender, taking anywhere from 45 minutes to an hour, depending on the type of meat used.

Add diced potatoes into the pot and continue to simmer for 15-20 minutes, prior to adding sliced leeks and sprigs of rosemary. Allow the ingredients to continue simmering uncovered, until the potatoes are tender but still retain their shape.
