Traditional Irish Brown Loaf
Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons butter
  • 2 cups whole wheat flour
  • 1/4 cup quick-cooking oatmeal
  • 1 1/2 cups nonfat plain yogurt
  • 1 teaspoon milk, or more as needed
Instructions
1
Preheat your oven to 375 degrees Fahrenheit, which is equivalent to 190 degrees Celsius. To prevent the baking sheet from sticking, lightly coat it with a thin layer of oil or cooking spray.
2
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and a pinch of salt. Use a pastry blender or your fingers to break down the butter into small pieces and mix it with the flour until you achieve a crumbly texture. Add 1/2 cup of whole wheat flour and 1/4 cup of quick-cooking oatmeal, stirring until everything is well combined.
3
Next, add 1 cup of yogurt to the mixture and gently stir until it's fully incorporated. If the dough starts to feel too dry, you can add a little milk at a time until it reaches your desired consistency. Be careful not to overdo it, as you want the dough to hold together without being too sticky.
4
Turn the dough out onto a lightly floured surface and use your hands to knead it gently about 5 times, until it forms a cohesive ball. Place the dough in the center of your prepared baking sheet and use a sharp knife to cut an 'X' shape on top of the loaf.
5
Bake the bread in your preheated oven for about 40 minutes, or until it's nicely browned. Remove the bread from the oven and transfer it to a wire rack to cool completely. You can serve your warm or cold bread, whichever you prefer.
