- 1/4 cup lemon marmalade
- 1 teaspoon grated orange zest

Immerse dried fruit in a scalding hot beverage for at least 2 hours or overnight. Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit (or 175 degrees Celsius). Thoroughly coat a round 9-inch cake pan or 9x5-inch loaf pan with butter or cooking spray to prevent sticking. In a separate bowl, whisk together flour, cinnamon, nutmeg, and baking soda until well blended; set aside.

In a large mixing bowl, whisk an egg lightly with a fork; combine sugar, marmalade, orange zest, and the tea-soaked dried fruit until a smooth mixture forms. Gradually add the flour mixture to the egg mixture, folding gently until just combined, then pour into the prepared cake pan.

Bake in the preheated oven for approximately 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely in the pan for 2 hours before transferring it to a wire rack to continue cooling to room temperature.
