Traditional Filipino Biko Dessert
Ingredients
  • 4 cups uncooked glutinous white rice
  • 6 cups cold water
  • 1 (14 ounce) can coconut milk, divided
  • 1 1/3 cups white sugar
  • 1 1/3 cups brown sugar
  • 3 tablespoons coconut preserves (such as Phil SupremeĀ®)

Let the rice absorb water overnight before using it.

Make your oven hot by preheating it to 350 degrees F (175 degrees C).

Grease a large rectangular baking dish with a size of 9x13 inches.

Cook the rice in water, along with coconut milk and sugar, over a medium heat on the stovetop until it becomes soft and has thickened, approximately 20 minutes. Transfer the cooked rice to the prepared baking pan.

Mix brown sugar with coconut milk and preserves in a small saucepan, then heat it until boiling. Pour the mixture carefully over the rice.

Place the baking pan in the preheated oven and let it cook until the top becomes thickened, roughly 25 minutes. Allow it to cool completely before cutting into squares and serving.
