Ingredients
- 1 (2 pound) red cabbage
- 2 tablespoons butter
- 1/4 cup distilled white vinegar
- 1 cup cranberry juice
- 2 tablespoons sugar, or more to taste
- salt to taste
Instructions
1
Begin by removing the outermost layer of leaves from the cabbage and discarding them. Next, cut the remaining cabbage into quarters and remove any white stem that may be present, discarding it as well. Then, finely chop the cabbage to prepare it for cooking.
2
In a large pot, melt butter over medium heat. Allow the butter to simmer and stir occasionally until it has melted completely.
3
Add the chopped cabbage to the pot with the melted butter and cook, stirring frequently, until it has softened slightly. This should take around 2 to 3 minutes.
4
Pour apple cider vinegar over the cabbage mixture and stir to coat everything evenly. Then, add cranberry juice and sugar to the pot.
5
Season the cabbage mixture with salt to bring out its natural flavors. Make sure to taste and adjust as needed.
6
Decrease the heat to a low setting, place a lid on top of the pot, and continue cooking, stirring occasionally, until the cabbage is completely tender. This may take anywhere from 60 to 75 minutes.
7
As the cooking time progresses, you can add more sugar if the mixture appears tart. This will help balance out the flavors and create a delicious, tender cabbage dish.
