Ingredients
- 2 large egg whites
- 2 cups buttermilk
- 2 cups all-purpose flour
- 4 tablespoons butter, melted
- 1 tablespoon white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegetable oil for frying

Combine egg whites in a spotless glass or metal bowl and whisk vigorously with an electric mixer on maximum speed until stiff peaks emerge.

Set the egg whites aside for now.

In a separate, large bowl, whisk together egg yolks, buttermilk, flour, melted butter, sugar, baking powder, baking soda, and salt until the ingredients are thoroughly incorporated.

Gently merge the egg whites into the mixture, taking care not to deflate them.

Preheat a traditional Danish cooking vessel over medium heat.

Add approximately 1 tablespoon of vegetable oil to the bottom of each cup.

Pour about 2 tablespoons of batter into each prepared cup.

Once bubbles start to form around the edges, quickly flip (Danish cooks often use a long knitting needle, but a fork will suffice).

Continue rotating the ball to prevent it from burning until it's cooked through.
