Ingredients
- 1 (14 ounce) package spaghetti
- 5 ounces guanciale (cured pork cheek), cut into small cubes
- 3 egg yolks
- 1 egg
- 3/4 cup grated Pecorino-Romano cheese
- salt and freshly ground black pepper to taste
Instructions
1
Boil water in a large container, adding a pinch of salt to enhance flavor. Once the water reaches a vigorous boil, carefully add spaghetti and continue boiling until it reaches your desired level of doneness, typically around 12 minutes. Set aside some of the pasta water before draining excess liquid.
2
In a separate pan, heat it over medium temperature; add guanciale and cook constantly until crispy, taking about 5 to 10 minutes.
3
In a separate bowl, combine egg yolks and whole eggs; whisk until smooth. Add cheese, salt, and pepper to the mixture and blend until well combined.
4
Add guanciale to the egg mixture and stir until fully incorporated. Then, combine it with the cooked spaghetti and mix until everything is evenly coated.
