Ingredients
- 1 cup water
- 4 cups candied mixed fruit
- 1 cup white sugar
- 3/4 cup butter
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon mixed spice
- 2 eggs, beaten

Heat your oven to a moderate temperature of three hundred degrees Fahrenheit (one fifty degrees Celsius).

To prevent the loaf pan from sticking, lightly coat it with a non-stick cooking spray or line it with a sheet of parchment paper or aluminum foil.

Combine the water, mixed fruit, granulated sugar and softened butter in a saucepan over medium heat. Bring the mixture to a rolling boil, stirring occasionally, and simmer gently for approximately ten minutes.

Sift the dry ingredients - including flour, baking soda and mixed spice - into a large mixing vessel. Gradually pour in the boiled mixture, stirring until everything is well combined.

Introduce the eggs into the mixture and blend until smooth. Pour the cake batter into the prepared loaf pan.

Bake the cake for ninety minutes in the preheated oven, or until a skewer or knife inserted into the top comes out clean.

Allow the cake to cool in the pan for at least ten minutes before removing it from the loaf pan.
