Ingredients
- 3 large kohlrabi bulbs, peeled and grated
- 1 small head white cabbage, shredded
- 4 carrots, grated
- 4 red bell peppers, grated
- 2 green bell peppers, grated
- 1/2 pound French-cut green beans
- 1/2 bunch fresh parsley, chopped
- 4 cups chicken broth, or as needed to cover
- 1 teaspoon white sugar, or to taste
- 1 pinch Hungarian paprika, or to taste
- salt and ground black pepper to taste
- 1/4 cup sour cream, for topping
- 1 tablespoon prepared horseradish, or to taste
Instructions
1
Combine the kohlrabi, cabbage, carrots, red bell peppers, green bell peppers, and green beans in a large stockpot.
2
Add a sufficient amount of chicken broth to the pot, ensuring that all the vegetables are submerged in liquid.
3
Heat the mixture over medium heat, allowing it to come to a gentle boil.
4
Continue cooking for approximately 20 minutes, or until the vegetables have reached tender consistency.
5
Add a touch of sweetness to the dish by sprinkling sugar over the top.
6
Introduce a smoky flavor with a pinch of paprika, followed by a generous amount of salt and black pepper to enhance the overall taste.
7
Finish the dish with a dollop of sour cream and a sprinkle of horseradish for added depth.
