- 1 cup chopped fresh spinach
- 1 1/2 teaspoons dried basil
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup milk
- 3/4 cup heavy cream
- 2 tablespoons all-purpose flour
- 1/4 cup grated Parmesan cheese

Fill a large cooking vessel with water that has been lightly seasoned with salt and place it on the stovetop over high heat. Wait for the water to reach a vigorous, rolling boil before adding your tortellini. Continue cooking until the pasta is soft and tender, which should take around 10 minutes.

In a separate saucepan, combine diced tomatoes, fresh spinach leaves, chopped basil, minced garlic, salt, and pepper. Place the saucepan over medium heat on your stovetop and stir the ingredients together until they start to bubble and release their flavors.

In a separate mixing bowl, whisk together milk, heavy cream, and all-purpose flour until you have a smooth, creamy mixture. Gradually add this mixture to the saucepan along with grated Parmesan cheese and stir until everything is well combined. Continue cooking over medium heat, stirring constantly, until the sauce reaches a heated state and starts to thicken, taking around 3 to 5 minutes.

Once the sauce has thickened slightly, reduce the heat to a low setting and let it simmer gently until it reaches your desired consistency, which should take around 2 minutes.

Remove the cooked tortellini from the pot with a slotted spoon, but do not rinse it under cold water. Gently add the pasta to the saucepan and stir everything together until the tortellini is well coated with the sauce.
