Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 2 teaspoons cumin
- 2 teaspoons coriander
- 1 teaspoon cardamom
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 2 fresh jalapeno peppers, seeded and diced
- 1/4 cup chopped cilantro
- 1 tablespoon lemon juice
- 1 (28 ounce) can diced tomatoes with juice
- 1 pound cod fillets, cut into chunks
Instructions
1
Preheat the cooking vessel by warming the oil over an intermediate temperature. Introduce the onion into the skillet and lower the heat to a minimal level, where it will cook for an extended period of time, stirring frequently, until it becomes tender and has developed a rich brown hue.
2
Combine the garlic paste and ginger paste within the skillet, allowing them to blend for a short duration of 1 minute. Introduce the spices - cumin, coriander, cardamom, turmeric, and salt - into the skillet, stirring until they are well incorporated. Incorporate the jalapeno, cilantro, lemon juice, and tomatoes with their juice into the skillet, ensuring that any residue from the bottom of the vessel is dislodged. Bring the mixture to a rolling boil, then reduce the heat to a low level and cover it, allowing it to simmer for 20 minutes. If desired, the sauce can be set aside for a considerable amount of time to allow the flavors to mature and blend together.
3
Resume the sauce's boiling process, then introduce the cod into the skillet. Lower the heat to a minimal level and cook for 15 minutes, or until the fish can be easily flaked with a fork.
