Tomato Cheese Toast

  • 1 tablespoon all-purpose flour
  • 3/4 cup milk
  • 1/8 teaspoon baking soda
  • 3/4 cup canned diced tomatoes
  • 1/4 teaspoon prepared yellow mustard
  • 2 eggs
  • 1 cup shredded Cheddar cheese
  • salt and pepper to taste

Heat the butter in a large cooking vessel over medium heat, allowing it to melt and become fluid. Combine the flour with the melted butter, stirring constantly until a smooth paste forms. Continue to cook and stir the mixture for approximately 10 minutes, or until it reaches a light brown color.

Gradually add the milk to the saucepan, stirring continuously to prevent lumps from forming. Allow the mixture to simmer over low heat, constantly stirring and monitoring its consistency until it thickens. Remove from the heat source.

Combine the baking soda with the canned tomatoes in a separate container, stirring until well combined. Introduce this mixture into the saucepan, blending it with the existing tomato sauce.

In a separate bowl, whisk together the mustard and eggs until smooth. Add this mixture to the tomato sauce, stirring until fully incorporated.

Place the saucepan over a pot of gently simmering water, creating a makeshift double boiler. Gradually add the cheese to the saucepan, stirring occasionally until it has fully melted and blended into the mixture. Season with salt and pepper to taste.
