Ingredients
- 1 recipe pastry for a single 9-inch pie crust
- 3 tomatoes, thinly sliced
- 2 teaspoons salt
- 3 cloves garlic, minced
- 1/4 cup chopped fresh basil
- 1/2 cup shredded Cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup mayonnaise
Instructions
1
Preheat the oven to 450 degrees Fahrenheit, which is equivalent to 230 degrees Celsius. Place the pie pastry into a 9-inch pie dish and press it firmly into place; use a fork to poke numerous holes in the bottom and sides of the pastry for even baking.
2
Proceed with baking the pie crust in the preheated oven until it is lightly browned, taking approximately 10 to 12 minutes. Once done, remove the pie crust from the oven and allow it to cool completely; then reduce the oven temperature to 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius.
3
While the pie crust is cooling, prepare the tomato mixture by placing a single layer of sliced tomatoes in a colander and sprinkling them with salt. Allow the tomatoes to sit for about 10 minutes, during which time they will release their excess moisture.
4
After the tomatoes have sat for 10 minutes, use a paper towel to gently blot any excess moisture from the tomato slices.
5
Next, arrange half of the prepared tomatoes in a layer at the bottom of the cooled pie crust, overlapping them slightly to cover the entire surface. Sprinkle half each of the garlic, basil, Cheddar cheese, and mozzarella cheese over the tomatoes. Repeat this layer once more, followed by a layer of mayonnaise spread evenly over the top.
6
Finally, bake the pie in the preheated oven until the cheese is melted and bubbly, taking approximately 30 minutes. Once done, remove the pie from the oven and allow it to cool on a wire rack.
