  • 1 yellow squash, cut into bite-size cubes
  • 1 zucchini, cut into bite-size cubes
  • 1 (12 ounce) package extra-firm tofu, cut into bite-size cubes
  • 1/4 cup brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • salt and ground black pepper to taste

Preheat a large skillet or wok over medium-high heat, allowing olive oil to warm up. Sauté minced garlic in the hot oil until its aroma is released, approximately 30 seconds have passed. Introduce sliced squash and zucchini into the skillet, stirring constantly until they become tender, taking around 7 minutes to achieve this.

Transfer the vegetable mixture to a separate serving container.

Reheat the skillet over medium-high heat, adding tofu pieces and sprinkling brown sugar and soy sauce on top. Cook and stir the tofu until it's golden brown from both sides, approximately 3 to 5 minutes have elapsed.

Return the vegetable mixture to the skillet; cook and stir until it's heated through, roughly 3 minutes have passed. Add a dash of Sriracha sauce and season with salt and black pepper to complete the dish
