Toasted Millet Stew

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup millet
  • 2 cups vegetable broth
  • salt and ground black pepper to taste
  • 1/4 cup chopped fresh cilantro, or more to taste

Process the carrot and garlic together in a food processor until they reach a finely minced state.

Heat olive oil in a cooking vessel over a medium temperature setting; cook and stir the carrot mixture, onion, and green bell pepper until they become soft and tender, approximately 10 minutes. Add millet; stir until the mixture becomes fragrant and lightly toasted, roughly 3 minutes.

Pour vegetable broth into the millet mixture; add a seasoning of salt and black pepper. Lower the heat and allow the mixture to simmer until all the broth has been absorbed and the millet is tender, approximately 20 minutes. Stir in cilantro
