Three Milk Sponge Cake
Ingredients
  • cooking spray
  • 5 eggs
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup self-rising flour
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 3 egg whites
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric). Next, take a moment to grease and dust an 8x12-inch baking dish with some cooking spray.
2
Now, let's get cracking on the egg whites. Crack 5 eggs into a large mixing bowl and whisk them until they're nice and smooth. In a separate bowl, add 1 cup of sugar gradually while continuously whisking the egg whites until they become frothy.
3
Add 1 egg yolk at a time to the bowl, whisking well after each addition. This will help incorporate air and create a smooth mixture. Stir in 1 teaspoon of vanilla extract to give the cake some extra flavor.
4
Now, it's time to add the flour. Sift 1 cup of all-purpose flour over the egg mixture and stir until everything is well combined. Pour the batter into your prepared baking dish.
5
Bake the cake in a preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean. Remove it from the oven and let it cool completely.
6
While the cake is cooling, prepare the sweetened condensed milk mixture. In a separate bowl, blend together 1 cup of sweetened condensed milk, 1/2 cup of evaporated milk, and 1/2 cup of regular milk. Stir in 1 tablespoon of vanilla extract.
7
Once the cake is completely cool, pour the sweetened condensed milk mixture over it.
8
To create a fluffy meringue frosting, beat 3 egg whites in a clean mixing bowl until they become soft peaks. Gradually add the remaining 1 cup of sugar and continue beating until stiff meringue forms. Stir in the remaining 1 teaspoon of vanilla extract.
9
Finally, spread the meringue frosting over the cake to give it a beautiful and fluffy finish.
