  • 4 slices smoked ham
  • 1/2 cup shredded Monterey Jack cheese for the top
  • 12 ounces ricotta cheese
  • 2 ounces Monterey Jack cheese, grated
  • 1/2 ounce finely grated Parmigiano-Reggiano (1/2 cup packed if grated on a microplane)
  • 1 teaspoon kosher salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 pinch nutmeg
  • 2 tablespoons freshly chopped Italian parsley

Next, heat a generous amount of olive oil in a large skillet over medium-high heat. Add sliced mushrooms, chopped onions, and a small amount of salt to taste. Cook, stirring occasionally, until the mushrooms begin to develop a golden brown hue and the onions become translucent, approximately 5 minutes.

Now, create some space in the center of the pan and add minced garlic. Cook until fragrant, about 30 seconds, adding more olive oil if the mixture seems dry. Add sliced bell peppers and cook until they start to soften, about 2 minutes.
