Vietnamese Caramelized Pork Belly
Ingredients
  • 2 pounds pork belly, trimmed
  • 2 tablespoons white sugar
  • 5 shallots, sliced
  • 3 cloves garlic, chopped
  • 3 tablespoons fish sauce
  • ground black pepper to taste
  • 13 fluid ounces coconut water
  • 6 hard-boiled eggs, peeled

Divide pork belly into 1-inch cubes, separating skin, fat, and meat for uniform cooking.

Melt sugar in a large cooking vessel over medium heat until it transforms into a smooth, golden-brown liquid, approximately 5 minutes. Introduce pork pieces and boost the heat to high, stirring constantly to facilitate the release of some pork fat, 3-5 minutes.

Add minced shallots and garlic to the pot, stirring until they blend with the pork. Introduce fish sauce and black pepper, mixing until the meat is evenly seasoned. Pour in coconut water and bring to a rolling boil. Add hard-boiled eggs and decrease the heat to low, covering the pot to simmer gently, periodically checking on the dish and replenishing it with water if necessary until pork is tender, roughly 1 hour.

Take the pot off the heat and allow it to rest for around 10 minutes. Remove excess fat from the surface of the dish.
