Ingredients
- 6 egg whites
- 1 pinch salt
- 1 1/2 teaspoons vinegar
- 2 cups castor sugar or superfine sugar
- 1 1/2 teaspoons vanilla extract
- 1/2 cup unsweetened flaked coconut
- 2 cups sweetened whipped cream
- 1 cup fresh strawberries, sliced
- 2 kiwifruit, peeled, halved lengthwise, and sliced
- 1 fresh peach - peeled, pitted and sliced
- 1/2 cup fresh blueberries

Preheat your oven to 450 degrees Fahrenheit, or 220 degrees Celsius. Later, you will decrease the temperature to 300 degrees Fahrenheit, or 150 degrees Celsius, when it's time to bake.

Prepare a round glass dish with a diameter of 9 or 10 inches by lining it with parchment paper.

In a large bowl, whisk together egg whites and salt until they become light and fluffy. Using an electric mixer or a stand mixer with a whisk attachment, beat the mixture until it reaches soft peaks. Gradually add sugar 1 tablespoon at a time while continuing to whip the mixture until it reaches stiff peaks. Stir in vanilla extract and vinegar, then gently fold in shredded coconut if using.

Spread the meringue mixture evenly into the prepared glass dish, making sure to cover all edges and corners.

Place the meringue mixture in the oven and immediately lower the temperature to 300 degrees Fahrenheit, or 150 degrees Celsius. Bake for 40 to 50 minutes, or until the top is crispy and has a pale straw color. Allow the meringue to stay in the oven until it has cooled down completely.

Once the Pavlova has cooled, top it generously with sweetened whipped cream. Arrange sliced strawberries, kiwis, peaches, and blueberries in a beautiful pattern of concentric circles on top.
