The Best Egg Bread
Ingredients
  • 2 (.25 ounce) packages active dry yeast
  • 2/3 cup warm water (110 degrees F/45 degrees C)
  • 6 large egg yolks
  • 4 large eggs, at room temperature, divided
  • 1/2 cup vegetable oil
  • 1/4 cup white sugar
  • 1 teaspoon salt
  • 4 1/2 cups all-purpose flour, divided
  • 1 pinch salt
Instructions
1
Begin by combining yeast and warm water in a large mixing container. Allow the mixture to sit for 5 minutes, permitting the yeast to soften and develop a rich, creamy foam.
2
Next, combine egg yolks, 3 whole eggs, oil, sugar, and salt in the same bowl. Mix these ingredients thoroughly to create a smooth dough, then gradually add 3 1/2 cups of flour until the mixture becomes sticky and cohesive.
3
Transfer the dough to a lightly floured surface, where you can knead it with the remaining 1 cup of flour until it becomes smooth and elastic. This process should take approximately 7 minutes.
4
Subsequently, place the dough in a well-oiled bowl and rotate it until the entire surface is evenly coated with oil. Cover the bowl with a damp cloth to create a warm, humid environment for the dough to rise.
5
Allow the dough to rise in this environment until it has doubled in volume, approximately 1 1/2 hours.
6
Now, punch down the dough and divide it into three equal portions. Roll each portion into a 12-inch long rope, then braid the three ropes together to form a single, cohesive loaf. Seal the ends of the bread and place it on a greased cookie sheet.
7
To add an extra layer of flavor, whisk the remaining egg with a pinch of salt and brush it onto the top and sides of the bread. Set this eggwash aside for later use.
8
Allow the bread to rise again until it has doubled in volume, approximately 45 minutes.
9
Preheat your oven to 375 degrees F (190 degrees C), then brush the bread with the eggwash once more.
10
Finally, bake the bread in the preheated oven until it is golden brown, approximately 40 minutes. Remove the bread from the oven and let it cool on a wire rack.
