Grilled Thai Pork Skewers

  • 1/4 cup white vinegar
  • 1/4 cup fresh lime juice
  • 2 tablespoons fish sauce
  • 2 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons MeltĀ® Organic Buttery Spread
  • 2 tablespoons fish sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 3 garlic cloves, minced
  • 1/2 teaspoon pepper
  • 2 (1 pound) pork tenderloins, trimmed of all visible fat and cut into 3x1/4-inch long strips
  • 1/2 cup lightly packed fresh cilantro

To prepare the sauce, combine sugar, vinegar, lime juice, fish sauce, garlic, and red pepper flakes in a bowl; reserve for serving immediately.

For the pork, combine buttery spread, fish sauce, soy sauce, brown sugar, garlic, and pepper in a bowl. Combine the marinade with the pork in a large resealable plastic bag, ensuring everything is well-coated. Refrigerate for up to 1 hour.

Thread two pieces of pork onto each skewer, creating a visually appealing arrangement.

To cook the skewers on a charcoal grill, open the bottom vents completely and light a large chimney starter filled with charcoal briquettes. Once the coals are hot, pour them evenly onto the grill and set the cooking grate in place. Cover the grill and heat it until hot, approximately 5 minutes.

For a gas grill, turn all the burners to high and cover the grill. Heat it until hot, around 15 minutes, adjusting the burners as necessary to maintain high heat.

Place the skewers on the preheated grill and cook until the pork is cooked through and lightly charred around the edges, 7 to 10 minutes. Flip the skewers halfway through cooking.

Once cooked, transfer the skewers to a platter and let them rest for 5 minutes. Remove the pork from the skewers, sprinkle cilantro leaves over the top, and serve. Pass the sauce separately for guests to enjoy.
