- 2 tablespoons creamy peanut butter
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons water
- 1 tablespoon Sriracha sauce
- 1 medium lime, juiced
- 1 (1 inch) piece fresh ginger root, minced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 2 medium heads baby bok choy, halved lengthwise, or more to taste
- salt and freshly ground black pepper to taste
- 1/4 cup chopped peanuts
- 1/4 cup chopped fresh cilantro

Combine peanut butter, soy sauce, water, Sriracha, lime juice, ginger, and garlic in a bowl to create the sauce. Allow it to sit for a while so that the flavors can meld together.

Heat oil in a large, non-stick frying pan over medium-high heat. Sear the bok choy with its cut sides facing downwards until it starts to develop a nice brown color, approximately 3-4 minutes. Flip the bok choy over and continue cooking until it reaches a deeper brown color, around 2-3 minutes more. Add some salt and pepper to taste.

Transfer the bok choy to a serving plate. Pour the prepared sauce over it and sprinkle some peanuts and cilantro on top
