- 1/3 cup minced fresh cilantro
- 2 green onions, thinly sliced
- 1 1/2 tablespoons minced fresh ginger, or more to taste
- 2 cloves garlic, minced
- 1 pinch salt and ground black pepper to taste
- 1 pound lean ground turkey
- 1/3 cup bread crumbs

Combine egg and soy sauce in a bowl, stirring until the mixture is smooth. Add cilantro, green onions, ginger, garlic, salt, and pepper to the bowl and mix until well combined. In a separate bowl, combine turkey and bread crumbs, stirring until the mixture is evenly distributed. Combine the two mixtures and shape into 4 patties.

Heat a large non-stick skillet over medium heat, allowing it to reach the optimal temperature. Place the patties in the hot skillet, covering it with a lid to trap heat and facilitate cooking. Cook the patties, flipping them once, until they are no longer pink in the center, approximately 15 minutes. Use an instant-read thermometer to check the internal temperature of the patties; they should read at least 165 degrees F (74 degrees C).
