Thai-Inspired Chicken Slaw Burgers
Ingredients
  • 8 hamburger buns, split
  • 2 tablespoons butter
  • 1/2 onion, chopped
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 3 tablespoons Thai sweet chili sauce, or more to taste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon white sugar
  • 2 pounds boneless, skinless chicken breast, or more to taste, cut in bite-size pieces
  • 2 tablespoons olive oil
  • 3 tablespoons sweet pickle relish
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 cups coleslaw mix

Position the oven rack approximately 6 inches away from the heat source and activate the broiler. Place hamburger buns, cut-side up, in a single layer on a baking sheet.

Place the toasted buns under the preheated broiler for 30 to 60 seconds, or until they reach your desired level of browning.

Melt butter in a large skillet over medium heat. Cook and stir the onion, tomato paste, and garlic in hot butter until the onion becomes tender, approximately 5 minutes. Combine chili sauce, Worcestershire sauce, and sugar into the onion mixture by stirring until well incorporated.

Add chicken to the skillet with olive oil, and cook and stir until the chicken is no longer pink in its center, 5 to 10 minutes.

Combine relish, lemon juice, and honey in a large bowl by whisking until smooth. Add coleslaw blend to the mixture, and toss everything together until it's evenly coated.

Spoon the chicken mixture into toasted buns, followed by a generous helping of coleslaw.
