- 1/3 cup roasted peanuts
- 32 leaves Thai basil
- 8 slices lime, quartered
- 1/4 cup finely chopped Thai chile peppers
- 1/3 cup diced shallot
- 1/3 cup diced fresh ginger

Combine coconut, peanuts, a small amount of shallot, ginger, lime zest, brown sugar, fish sauce, and water in a small saucepan. Mix the ingredients together by gently stirring them with your spoon.

Bring the mixture to a boil, then gradually increase the heat to medium-high and maintain a simmer. After some time, decrease the heat to medium and continue to cook, stirring occasionally, until the mixture has decreased in volume by roughly half and has started to thicken slightly.

Once the saucepan is removed from heat, allow it to cool down completely before using. It's worth noting that the sauce will thicken further once it has cooled, making adjustments easier.

If you find the sauce too thick after it has cooled, you can easily thin it out with a small amount of water. Conversely, if the sauce is too runny, you can put it back on the heat and continue to reduce it until it reaches your desired consistency.

To assemble the wraps, place a generous amount of chicken onto a fresh spinach leaf. Next, add a small handful of toasted coconut flakes, a few peanuts for added crunch, and a single Thai basil leaf. On top of the chicken, place one piece of lime, followed by one piece of Thai chili and a small amount of minced shallot.
