  • 2 tablespoons sweet chili sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar
  • 1/4 cup chopped fresh cilantro
  • 4 green onions, sliced
  • 1 egg

Combine the fish with a generous amount of flour to create a smooth paste. Add oyster sauce, sweet chili sauce, fish sauce, and brown sugar to the mixture, stirring until well incorporated. Incorporate chopped cilantro and green onions into the blend. Use an egg to bind the ingredients together, processing until everything is harmoniously combined. Place the mixture in the refrigerator for 30 minutes to allow the flavors to meld.

Using your hands, shape the mixture into compact patties. Lightly dust each patty with a thin layer of flour to prevent sticking.

Heat a substantial amount of oil in a heavy skillet until it reaches a depth of 1/2 inch. Place the skillet over medium-high heat, allowing the oil to reach a hot state. Once the oil is hot, carefully add the fish cakes and fry for 8 minutes on each side, or until they achieve a golden brown color.
