Thai Chicken Noodles
Ingredients
  • 1 (8 ounce) package thin spaghetti, broken in half
  • 2 tablespoons vegetable oil
  • 1 1/2 pounds chicken tenders, cut into bite-size pieces
  • 4 stalks celery, sliced
  • 2 red bell peppers, sliced
  • 1 red onion, sliced
  • 2/3 cup shredded carrots
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sesame oil
  • 3/4 cup unsalted peanuts
  • 1 tablespoon minced garlic
  • 1 teaspoon red pepper flakes
Instructions
1
Begin by filling a large container with water, adding a moderate amount of salt to the mixture. Place the pot over high heat and wait for the water to reach its boiling point.
2
While the water is heating up, prepare a large cooking vessel by warming oil over medium heat. Add chicken to the pan and stir constantly until it reaches a fully cooked state, taking approximately 5 minutes.
3
Add sliced celery, bell peppers, onions, and carrots to the pan with the chicken and continue stirring until these vegetables are slightly tender, about 5 minutes.
4
Simultaneously, combine chicken broth, soy sauce, cornstarch, garlic powder, and sesame oil in a small cooking vessel. Place the pan over low heat and let it simmer until the sauce reaches your desired level of thickness, which should take around 5 to 10 minutes.
5
Add peanuts, minced garlic, and red pepper flakes to the chicken-vegetable mixture in the pan. Continue cooking for an additional 2 minutes.
6
Pour the prepared sauce into the pan with the chicken-vegetable mixture, then add cooked spaghetti. Mix everything together until the pasta is evenly coated with the sauce.
