Thai Butternut Squash Curry

  • 1 tablespoon olive oil, or as needed
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 1 medium red onion, diced
  • 2 tablespoons red curry paste
  • 1 1/4 cups vegetable broth
  • 4 medium tomatoes, chopped
  • 1 (15 ounce) can chickpeas, drained
  • salt and ground black pepper to taste
  • 3 tablespoons Greek yogurt
  • 1/2 tablespoon ground coriander

Preheat your cooking vessel over a moderate flame.

Add oil to the pot and bring it to a warm state. Introduce butternut squash into the pot and stir constantly for 3 minutes, allowing it to soften slightly.

Add a diced onion and curry paste to the pot; stir constantly for 4 minutes, allowing them to blend with the squash.

Pour vegetable broth into the pot and cover it; continue cooking until the butternut squash is tender, approximately 20 minutes.

Combine diced tomatoes, chickpeas, salt, and pepper in the pot; cook until they are heated through, around 4 minutes.
