  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons vegetable oil
  • 1 large sweet onion, chopped
  • 2 green bell peppers, chopped
  • 2 zucchini, diced
  • 3 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 (10 ounce) can tomato sauce
  • 1/2 (16 ounce) jar hot chunky salsa
  • 2 tablespoons chili sauce
  • 2 pounds ground buffalo

Soak the beans in water overnight, allowing them to rehydrate and soften. After an overnight soak, drain the beans thoroughly and give them a fresh rinse under cold running water.
