Tex-Mex Fajita Platter

  • 2 pounds beef skirt steak
  • 2 pounds boneless chicken thighs
  • 2 teaspoons fajita seasoning
  • 2 1/2 teaspoons garlic powder, divided
  • 2 cups refried beans
  • salt to taste
  • lemon pepper to taste
  • 4 avocados - peeled, pitted, and mashed
  • 1 cup corn oil
  • 24 corn tortillas
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 1/3 bunch cilantro, chopped
  • 1 (16 ounce) package shredded American cheese
  • 12 ounces sour cream
  • 2 large tomatoes, chopped
  • 4 pickled jalapeno peppers, sliced

Preheat the oven to 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius.

Season beef and chicken with a blend of fajita spices and two teaspoons of garlic powder. Slice the meat into one-inch strips, then set it aside for later use.

Warm refried beans in a saucepan over medium-low heat, stirring occasionally to prevent scorching.

In a separate bowl, combine mashed avocados with salt, lemon pepper, and half a teaspoon of garlic powder. Set this mixture aside for now.

Heat corn oil in a deep skillet over medium-high heat, then carefully add tortilla pieces to the pan. Fry until crispy, removing them from the skillet and placing them on paper towels to drain excess oil. Repeat this process with any remaining tortilla pieces, making sure not to overcrowd the pan.

Discard the used oil and wipe out the skillet with a paper towel.

Return the skillet to medium heat, then add beef, chicken, bell pepper, and onion. Cook over medium heat, stirring occasionally, for approximately seven minutes. Stir in some chopped cilantro during the last minute of cooking.
