Ingredients
- 2 cups chicken broth
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10 ounce) can diced tomatoes with green chile peppers
- 1 (12 ounce) package corn tortillas
- 3 cups cooked, diced chicken breast meat
- 1 onion, chopped
- 1 green bell pepper, chopped
- 8 ounces shredded Cheddar cheese
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic salt
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
To begin, lightly coat a shallow 3-quart casserole dish with a thin layer of oil or cooking spray.
3
Next, combine the chicken broth, chicken soup, mushroom soup, and tomatoes with chiles in a large mixing container; set it aside for the time being.
4
Now, create layers in your prepared casserole dish. Alternate between 1/2 each of the following ingredients: tortillas, chicken, onion, bell pepper, and cheese. Pour 1/2 of the soup mixture over each layer, making sure to cover them evenly.
5
Repeat this process with the remaining 1/2 each of tortillas, chicken, onion, and bell pepper. Pour the remaining 1/2 soup mixture over these layers, followed by a generous helping of the remaining cheese. Sprinkle a pinch of chili powder and garlic salt over the top to add flavor.
6
Finally, place your casserole dish in the preheated oven and bake for 30 to 45 minutes, or until it reaches your desired level of doneness.
