Tender Spicy Corned Beef

  • 1/2 (12 fluid ounce) can or bottle dark beer
  • 1 tablespoon dry mustard
  • 1 pinch salt and ground black pepper to taste
  • 3 cloves garlic, cut into slivers
  • 3 whole cloves, or to taste
  • 1 (3 pound) round-cut corned beef roast with spice packet
  • 1 (16 ounce) package carrots, cut into 2-inch pieces
  • 1 (16 ounce) package small red potatoes
  • 1 head green cabbage, cored and cut into wedges
  • 1 tablespoon butter, or to taste

Preheat your oven to a medium-high temperature of 325 degrees F (165 degrees C).

Pour the beer into a suitable roasting vessel and combine it with the corned beef seasoning packet, dry mustard, salt, and black pepper. Utilize a sharp knife to create multiple holes in the corned beef, then insert garlic slivers into these openings. Insert whole cloves into the meat as well.

Lay the corned beef flat in the roasting pan, ensuring it is fully exposed to the seasonings.

Place the corned beef in a preheated oven for approximately 1 hour.

Spread the carrots around the corned beef, and continue to roast in the oven for an additional 1 1/2 hours.

Distribute the red potatoes around the corned beef, and roast until both the meat and vegetables are tender, taking about 40 minutes more.

Insert a steamer basket into a saucepan and fill it with water, leaving just enough room at the bottom. Bring the water to a boil, then add the cabbage wedges and cover the saucepan.

Place the steamed cabbage on a serving platter, season with salt and black pepper to taste.

Allow the butter to melt over the hot cabbage, then remove any visible fat from the corned beef.
