Ingredients
- 2 (4 ounce) cod loins
- 1 pinch salt and freshly ground black pepper
- 1 lemon
- 2 teaspoons butter
- 1 shallot, thinly sliced

Fill a large pot with water and bring it to a boil, then attach an immersion circulator to the pot. Set the temperature to 130 degrees F (54 degrees C) and set a timer for 35 minutes.

Sprinkle cod fillets lightly with salt and pepper, then top each piece with half of the lemon zest, a teaspoon of butter, and two slices of lemon.

Separate shallot slices into two resealable plastic bags. Place a cod loin on top of the shallot slices in each bag, leaving one small corner open to allow for air release.

Carefully lower the bags into the preheated water, ensuring they are fully submerged. Once all air has been released from the bags, close the corners and start the timer.

When the timer goes off, remove the bags from the water and carefully transfer the cod loins to serving plates. Drizzle a tablespoon of cooking liquid from each bag over each loin, then garnish with additional lemon slices.
