- 1/2 large white onion, cut into large chunks

In order to prepare the spice blend, combine the dried garlic powder, ground cumin, ground coriander, dried oregano, and cayenne pepper in a bowl. Thoroughly massage the spice mixture into the surface of the pork, ensuring it is evenly coated.

Next, place the pork roast in a pressure cooker with the beef broth, bay leaves, and sliced onion. Heat the mixture over high heat until it reaches its boiling point; then seal the cooker and bring to full pressure. Reduce the heat to maintain a high-pressure environment, and cook for 45 minutes.

After completing the cooking process, remove the pressure cooker from the heat source and allow the internal pressure to decrease naturally. Transfer the cooked pork to a serving dish and use two or more forks to shred the meat into bite-sized pieces.
