Tender Mississippi Pot Roast
Ingredients
  • 1 (3 1/2) pound boneless beef chuck roast
  • Kosher salt and ground black pepper, to taste
  • 1/4 cup flour
  • 3 tablespoons olive oil
  • 1/2 cup beef broth
  • 1 (1 ounce) packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
  • 1/2 cup butter
  • 8 pepperoncini

Preheat your oven to a high temperature and sprinkle generous amounts of salt and pepper over the chuck roast, making sure it's evenly coated.

Next, take a bowl of flour and sprinkle an even layer over the surface of the meat, ensuring it's fully covered.

In a large pan with high heat, warm oil until it reaches an extremely hot state without actually smoking. This should take a few minutes.

Sear the chuck roast in the pan for about 15 minutes on each side, resulting in a nicely browned and crusty exterior.

Place the roast in a large slow cooker, pouring beef broth around it to create a moist environment. Sprinkle the desired amount of Ranch seasoning over the roast, followed by a pat of butter on top.

Add some pepperoncini slices around the roast for extra flavor and place a lid on the slow cooker. Set it to low heat and let it cook for 7-8 hours.

After the cooking time has elapsed, shred the meat with two forks and mix it with the sauce in the slow cooker. Serve over your choice of bread, egg noodles, or potatoes.
