Heat canola oil in a saucepan over medium heat, allowing it to warm up. Cook and stir the onion, garlic, and cumin seeds in the hot oil until the onion has developed a rich brown color, taking around 10 to 15 minutes. Next, add the lamb, combining it with the mixture of tomato paste, coriander, salt, garam masala, turmeric, and red chile powder. Ensure everything is well coated with the spices. Cover the saucepan and let it simmer, waiting for the meat to become tender and lose its pinkish hue in the center, approximately taking 1 hour.
