Combine water, soy sauce, vegetable oil, lemon-pepper seasoning, and minced garlic in a large container; immerse pork chops and thoroughly coat with the mixture. Refrigerate for at least 2 hours to allow flavors to meld.

Prepare an outdoor grill for medium-high heat and brush the grates with a small amount of oil to prevent sticking.

Release pork chops from their marinade and gently shake off any excess; discard the remaining liquid.

Sear the pork chops on the preheated grill until they reach a safe internal temperature of 145 degrees F (63 degrees C), flipping them every 5 minutes or so. Use a food thermometer to ensure the center is no longer pink.
