Tender Braised Short Ribs

  • 3 1/2 pounds beef short ribs
  • salt and ground black pepper to taste
  • 6 sprigs fresh thyme, leaves stripped
  • 1 bay leaf
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup dry sherry
  • 1 quart beef broth

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Next, cook the bacon in a large skillet over medium-high heat, stirring occasionally until it reaches an even golden brown color, approximately 10 minutes. Use a slotted spoon to transfer the cooked bacon to a Dutch oven and reserve its savory drippings in the skillet.

Then, generously sprinkle salt and pepper over the short ribs to season them perfectly.

After that, heat up those reserved bacon drippings in the skillet over high heat and cook the short ribs until they are nicely browned on all sides, taking about 3 to 5 minutes per side. Transfer the ribs to the Dutch oven and set aside, reserving those delicious drippings in the skillet.

Now, reduce the heat to medium and cook the onion in the skillet until it becomes soft and golden, taking around 5 to 10 minutes. Add some minced garlic and cook until it becomes fragrant, approximately 30 seconds.

Next, whisk the flour into that onion mixture and stir until it forms a smooth paste-like consistency and turns light golden brown, taking about 1 to 3 minutes.

Pour in some sherry wine into the onion mixture and cook until it thickens and becomes hot, about 2 minutes. Then, pour that onion-sherry mixture into the Dutch oven and add some beef broth to it. Season with salt to taste.

Bring that mixture to a simmer and cover the Dutch oven with a lid.

Transfer the Dutch oven to your preheated oven and cook until those short ribs are tender enough to be forked, approximately 2 hours.

Remove the ribs from the Dutch oven and transfer them to a serving dish, reserving that delicious sauce in the pot.

Set the Dutch oven over high heat and boil the sauce until it reduces slightly and becomes thicker, about 10 minutes. Finally, spoon that reduced sauce over the ribs.
