Ingredients
- 3 1/2 pounds boneless beef chuck roast
- 5 teaspoons kosher salt, divided
- 2 1/2 teaspoons freshly ground black pepper, divided
- 2 teaspoons garlic powder
- 4 teaspoons olive oil
- 2 tablespoons butter
- 1 medium onion, chopped
- 1 pound cremini mushrooms, halved
- 3 medium carrots, cut into 2 inch pieces
- 1 head garlic, cut in half lengthwise
- 1 cup red wine
- 3 sprigs thyme
- 2 bay leaves
- 2 teaspoons Worcestershire
- 2 cups beef broth, or more as needed
- 2 tablespoons chopped fresh parsley
Instructions
1
To prepare this dish, first collect all necessary ingredients and preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, sprinkle salt, pepper, and garlic powder evenly across the surface of beef pieces to ensure uniform seasoning.
3
In a large skillet, heat oil over high heat. Then, add the beef pieces and reduce the heat to medium-high. Allow the meat to cook undisturbed for 4 minutes, or until it releases easily from the skillet and forms a golden brown crust. Flip the pieces over and continue cooking until they are evenly browned on all sides.
4
Remove the cooked meat from the skillet and set it aside for later use.
5
Return the skillet to medium-high heat and melt 2 tablespoons of butter into the remaining drippings. Add sliced onions, mushrooms, and carrots to the pan and cook for 5 minutes, stirring frequently to prevent burning. Scrape the bottom of the pan occasionally to release any browned bits that may have accumulated.
6
Add minced garlic to the pan and cook for 1 minute, stirring constantly.
7
Next, stir in a small amount of wine to deglaze the pan and release any remaining browned bits. Return the cooked meat to the pan, along with any accumulated juices, and add dried thyme, bay leaves, and Worcestershire sauce.
8
Carefully pour in beef broth just enough to cover 2/3 of the meat, leaving some room at the top. Bring the mixture to a gentle simmer.
9
Cover the pan and place it in the preheated oven. Allow the dish to cook for 2 to 2 1/2 hours, or until the meat is extremely tender.
10
Finally, serve and enjoy your delicious dish
