  • 1 beef tongue
  • 1/2 white onion, sliced
  • 5 cloves garlic, crushed
  • 1 bay leaf
  • salt to taste
  • 3 tablespoons vegetable oil
  • 5 Roma tomatoes
  • 5 serrano peppers
  • salt to taste
  • 1/2 onion, diced
  • 2 (10 ounce) packages corn tortillas

Place the beef tongue in a slow cooker and submerge it beneath a layer of water. Add slices of onion, minced garlic, and a bay leaf to the container for added flavor. Sprinkle salt over the tongue to enhance its taste. Seal the cooker and cook on Low for an extended period of 8 hours or overnight.

Remove the tongue from the slow cooker and pull it apart into tender, stringy strands.

Heat a generous amount of oil in a skillet over medium heat. Sear the tomatoes and peppers within the hot oil until they are tender on all sides, releasing their natural juices. Transfer the tomatoes and peppers to a blender, retaining the oil within the skillet; sprinkle salt over the mixture to bring out its flavors. Blend the ingredients briefly, leaving some texture intact.

Cook diced onion in the skillet over medium heat until it becomes translucent and soft to the touch; then stir in the tomato mixture. Allow the onion to cook for an additional 5-6 minutes, infusing it with flavor.

Assemble the tacos by placing shredded beef tongue meat within a tortilla and spooning salsa over the top.
